Chef and owner Yuji Iwasaki opened VELROSIER in the Ashiya/Kurakuen area in 2014, after spending 10 years developing his skills in the Chinese dining restaurants of hotels. His delicate and beautiful arrangements of food, and his cooking methods that utilize the latest cookware, are breaking new ground in the area of Chinese gastronomy – creating an instant buzz around his restaurant. In 2019, the restaurant relocated to Kyoto Kawaramachi. His cooking philosophy of "adding on" – a constant search for new flavors to combine with seasonal ingredients and create new tastes – together with his style of continuous creation, draw eyes from the restaurant industry.
